How to Use
Pat proteins dry, coat generously, and rest 30 minutes to overnight before cooking. The sugar caramelizes fast, so run grills and smokers between 225 and 325°F and watch the color. Excellent on chicken thighs, pork ribs, pork shoulder, salmon, and shrimp. Also strong as a finishing dust on sweet potato fries, roasted carrots, and bacon-wrapped jalapeños.
