Mexico City’s street-food culture offers countless starting points. This kitchen follows tacos al pastor: pork seasoned with chile and achiote, paired with pineapple, onion, and cilantro. The home version brings those contrasts to an everyday kitchen.

La Gente

Al pastor reflects the influence of Middle Eastern spit-roasting traditions on Mexican cooking. A taquería’s vertical trompo creates browned edges as the meat turns; the recipe below adapts the dish for home equipment and keeps the sweet, tart, and savory balance in focus.

Sabor

Al pastor is chile and vinegar on pork, with sweetness from the pineapple and the char of the flame. The adobo is guajillo for color and fruit, ancho for depth, a little achiote for earth, and the warm spices in the background where you cannot name them but would miss them.

From your market: three pounds of boneless pork shoulder, sliced thin, a fresh pineapple, white vinegar, white onion, cilantro, limes, corn tortillas, and a small piece of achiote paste if you want the taquería color. Badia does not make achiote paste, and many home cooks skip it and let the guajillo do the work. Either is honest.

Tacos al pastor en casa

A trompo is a two-meter tower of pork beside an open flame. This is the version for a kitchen with an oven, and it is closer than you would think.

Serves 6

The adobo

  • 5 Badia Guajillo Peppers, stemmed and seeded
  • 2 Badia Ancho Peppers, stemmed and seeded
  • 4 tsp Badia Minced Garlic in Olive Oil, or 4 garlic cloves
  • ½ white onion, roughly chopped
  • ½ cup pineapple juice
  • ⅓ cup white vinegar
  • 1 tsp Badia Cumin, ground
  • 1 tsp Badia Oregano, whole
  • 2 Badia Cloves, whole
  • 5 Badia Black Peppercorns, whole
  • ¼ tsp Badia Cinnamon, ground
  • 1 tbsp achiote paste, optional
  • 2 tsp salt

The pork

  • 3 lb boneless pork shoulder, sliced ¼-inch thin
  • 1 pineapple, peeled, one thick slice reserved for the top, the rest cut into small pieces
  • 1 white onion, half a thick slice reserved for the base

To serve

  • Corn tortillas
  • White onion, finely chopped
  • Cilantro, chopped
  • Limes
  • Salsa verde or roja
  1. Toast and soak the chiles. Press flat on a hot dry skillet 20 to 30 seconds a side until fragrant. Do not blacken. Cover with hot water 20 minutes. Drain.
  2. Blend the adobo. Chiles, garlic, onion, pineapple juice, vinegar, cumin, oregano, cloves, peppercorns, cinnamon, achiote if using, and salt. Blend until smooth. Strain.
  3. Marinate. Coat every slice of pork in the adobo. Cover and refrigerate at least 4 hours. Overnight is what the taquería does.
  4. Build the trompo. Push a metal skewer or two bamboo skewers upright through the half onion slice set on an oven-safe pan. Thread the pork slices onto the skewer one at a time, rotating each slightly, pressing them down into a tight stack. Top with the thick pineapple slice.
  5. Roast. Heat the oven to 375°F. Roast the tower 1½ hours, until the outside is dark red and the edges are crisp, turning the pan once. If your oven has a broiler, give it 5 minutes at the end.
  6. Shave and crisp. Slice the pork thinly off the tower. Get a skillet very hot with a little oil and crisp the slices in batches, 1 to 2 minutes, so the edges char.
  7. Serve. Warm tortillas. Pork, a few pieces of pineapple from the top of the tower, onion, cilantro, salsa, lime. Two per plate, then two more.
