Savory Herb Breakfast Muffins

Ingredients

  • 1 loaf country-style French bread, cut into 1-inch cubes and toasted (about 8 cups)
  • 10 oz turkey sausage
  • 2 carrots, finely chopped
  • 2 celery stalks, finely chopped
  • 1/2 onion, finely chopped
  • 2 tsp Badia Poultry Seasoning
  • 1 cup chicken broth
  • 3 large eggs

Method

  1. Preheat the Oven
  2. Preheat oven to 350°F and grease a mini muffin tin.
  3. Cook the Sausage
  4. In a skillet over medium heat, cook turkey sausage until fully browned. Remove and set aside.
  5. Sauté the Vegetables
  6. In the same pan, add carrots, celery, and onion. Cook for about 5 minutes until softened.
  7. Combine Ingredients
  8. In a large bowl, combine toasted bread cubes, cooked sausage, sautéed vegetables, Badia Poultry Seasoning, broth, and eggs. Mix until well combined.
  9. Assemble the Muffins
  10. Spoon the mixture into the prepared mini muffin tin, pressing gently to hold shape.
  11. Bake
  12. Bake for 15 minutes, or until golden brown and set.
  13. Serve
  14. Let cool slightly, then remove from tin and serve warm.
