Mediterranean-Style Lamb Chops

Ingredients

  • 8 lamb chops
  • 1/2 cup Badia Mojo Marinade
  • 2 tbsp olive oil
  • 1 tbsp Badia® Lemon Pepper Seasoning
  • 1 tsp Badia® Cumin
  • 1 tsp Badia® Garlic Powder
  • 1 tsp Badia® Smoked Paprika
  • Fresh rosemary sprigs (optional, for garnish)
  • Lemon wedges (for serving)

Method

  1. In a large bowl or resealable plastic bag, combine the lamb chops with Badia® Mojo Marinade, olive oil, Badia® Lemon Pepper Seasoning, Badia® Cumin, Badia® Garlic Powder, and Badia® Smoked Paprika. Mix well to coat the chops evenly. Cover and refrigerate for at least 2 hours, preferably overnight, for maximum flavor.
  2. Heat a grill or skillet over medium-high heat. If using a skillet, lightly grease it with olive oil.
  3. Remove the lamb chops from the marinade, shaking off any excess. Grill or sear each lamb chop for about 3-4 minutes per side.
  4. Pair these lamb chops with roasted vegetables, a light cucumber salad, or Badia Quinoa. Let the lamb chops rest for 5 minutes before serving.
  5. Garnish with fresh rosemary sprigs and serve with lemon wedges.
